When I clean out my fridge, I find that I come up with new meals as I am desperate not to waste food. I don’t even know what to call this… All I know is that I needed to use the ingredients asap!
Ingredients:
500g of chicken gizzard, cleaned
4 small new potatoes, cut in half
½ medium onion, finely chopped
2 tbs butter
1 tbs olive oil
2 tbs plain flour
1 cup water
1 Knorr cube
salt to taste
1 tsp chilli powder
Method:
Boil the gizzard with your desired spices until soft and drain, keep aside. Boil the potatoes with skin on and plantain in salted water and keep aside too. Fry the onion in the butter and olive oil. Add the gizzard and the flour and combine thoroughly add water and Knorr cube and check for salt. You can add some chilli/pepper. Add the potatoes and cubed plantain. Simmer for about 10 mins and then add the chard and cook for another five.
