Masa Masa Masa

I bought a pack Quinoa ages ago, it had been sitting in my cupboard and just recently overcame the fear of cooking it. I made a jollof out of it (which was actually amazing, yes I didn’t have high hopes!) with half of the pack so we have some more to experiment with. Yay!

While researching on how to cook Quinoa, I found that the cooking process is very similar to that of rice. This means I can substitute rice with Quinoa for a much healthier meal because we shall be slim by force! Oh, and it so happens that I am craving masa…

Quinoa Masa

Ingredients:

1 cup Quinoa, washed thoroughly and drained

1 tsp active yeast

1 tbs fructose powder (or sugar)

½ cup of warm water

oil for frying

Method:

Pre heat the over to 350 degrees F for 15 minutes and switch off. In the meantime mix the water and sugar and then add the yeast and keep aside.

Blend the washed Quinoa in a food processor or blender, gradually add the yeast mixture, you may need to add more water as it gets thicker but be careful not to add to much water. You want a slightly thicker pancake consistency (I hope this makes sense!). Pour the mixture is an oven dish with a lid and place in the warm oven for 45 – 60 mins. When you open the dish the mixture should have risen with bubbles in it. You can leave it in for longer if this isn’t the case.

Using a really small frying pan, heat 2 tsp of oil and pour the Quinoa Masa mixture. Fry one side until golden brown and flip the cake to fry the other side.
