I used to think spinach was only used in Nigerian soup dishes. As I grow and learn about new dishes, I am no longer afraid to experiment and re-invent. It goes with everything! Well I think so… Noodles, eggs, meatballs… the list goes on.
I am adding it to rice right now. Here is how:
Spinach Rice
Ingredients:
1 tbs vegetable ghee
1 tsp cumin seeds
1 tsp coriander seeds
1 tsp mustard seeds
1 tsp peppercorns
1 medium onion, sliced
spring onions, chopped
1 ½ basmati rice, washed and drained
1 cup of frozen spinach
salt to taste
Method:
Heat the ghee and fry the seeds and peppercorns until they start to pop. Add the rice and salt and stir thoroughly. Add a cup of water and the spring onions and spinach. When the rice is ready, mixed thoroughly to combine the spinach and the seeds and enjoy.
I need to try this. I LOVE spinach!!
