I am taking part in Belleau Kitchen random recipe challenge. I think its a great idea and i plan to take part every month. Below are the rules set by Dominic of Belleau Kitchen:
1. take all your cook books off the shelf and shuffle them ( a friendly giant will help)
2. close your eyes and run your fingers down their spines and stop at a random book
3. now, close your eyes again and randomly open the chosen book at a page
4. cook this dish (if it’s something you’ve cooked before then turn to the very next page and cook that dish)… and don’t cheat… (do it with a friend in the room who will make you stick to it…) it’s a challenge after all and you’re only cheating yourself… this is specifically designed to take you out of your comfort zone…!
5. post it up on your blog, with a link to this page and then email me with a link at dominic(@)belleaukitchen.co.uk so I know you’ve joined in, you can also attach the badge to show people you’re taking part.
So I followed the rule and I chose page of 118 of Paul Lay’s the real italian food. Gosh I don’t even know if I have ever opened this cookbook, that why I think the is such a great idea.
Mussels, Potatoes and Courgette Casserole
Ingredients (yes I am a lazy!):
Ingredients Substitution:
- I bought 1kg worth of mussels at the fish monger only for me to get home and fine they had gone off. I really should have been suspicious as they were already packed in a non see through packaging. I had some seafood medley (mussels, prawns, squid) in the freezer which I used instead.
- I couldn’t find Pecorino cheese anywhere, I didn’t even know what this was (see why this is such a wonderful idea?). My friend Google told me that it is a hard cheese similar to Parmesan although they come from different animals, Parmesan from goat and Pecorino from sheep.
Method:

It really tasted yummy, light and healthy. Here is my version, what do you think?
