Meat Balls…

So my little dragon has decided she is on Atkins diet. Everything is either “hot” (even if it is stone cold) or “no”. Stew or anything red is poison. Only thing she would open her mouth for is meat, chicken or fish (ole, thief!) and of course her weetabix.

I made two versions of these #meatballs one for us and one for the Atkins dieter! Hers contains broccoli, carrots, rice amongst other things… Mama is smart too! I also mix peanut butter in her weetabix to give her some sort of balance diet. Today though she smashed the jar on the floor… maybe mama isn’t that smart. Sigh!

This is another recipe where I have incorporated the almond meal.

Meatballs

Ingredients:

500g of beef sausages (or which ever meat you prefer), skin removed
4 cloves of garlic, minced
1 tbs of chopped chives
1 Tbs of chopped spring onions, the green part
1 tbs of chopped pine nuts
Chili powder
1 tbs of almond meal or bread crumbs
1 tsp Knorr Chicken stock power
Salt

Directions:

Mix all the ingredients together and combine thoroughly. Roll about 1 1/2 tablespoon of the meat mixture into a ball. Repeat this for the rest of the meat.

In a shallow, heavy based pan heat some olive oil. Add the meat balls and shake frequently to fry all sides of balls evenly.
