Plantain and Yam Stuffed Balls
Ingredients:
1 large very ripe plantain, mashed
1 cup breadcrumbs
2 tbs yam, grated
2 tsp chili flakes
1 knorr cube, crushed
1 tsp thyme
4 quail eggs, boiled
4 tbs minced meat, spiced to your desire
8 tsp mozzarella cheese, grated
2 jumbo prawns, cut in half
Method:
Preheat the oven to 350oF.
Mix the mashed plantain, yam, chilli flakes, thyme and Knorr cube. Combine thoroughly. Add a table spoon of bread crumbs to the mixture and combine and check the dough. What you are after is a firm texture to allow you stuff the dough. You don’t want it too dry so after each table spoon of breadcrumbs, check the texture of the dough. If it is right, stop adding bread crumbs.
Cut a large piece of cling film and place on a chopping board. Place one table spoon of the plantain dough and spread in thinly. place one egg in the middle, gather the film and form a ball by closing and twisting the cling film. Remove the plantain ball from the cling film and smooth the dough with your palms. Place the final product on a plate dusted with bread crumbs to prevent it from sticking to the plate.
Repeat the process for the remaining eggs, 1 tbs each of the minced meat, 2 table spoon each of the cheese and one piece each of the prawns.
Line a baking tray with foil paper and oil it. Place the plantain ball on the tray and bake for 30 minutes. enjoy hot!
