Fried Rice

Ingredients:

1½ cups of brown basmati rice
1 cup of Mexican mixed veg
1 cup of cooked prawns
1 green bell pepper
½ medium onion, chopped
1 tsp of garlic
1 tsp of ginger
1 tsp of thyme
½ tsp of curry powder
3 tbs of oil
2 tbs of soy sauce
1 Knorr cube

Method:

Par boil the rice, rinse and drain. Blend the bell pepper and set aside.

Heat the oil for 3 minutes and fry the blended bell pepper until all the liquid has evaporated. Add all vegetables including garlic and ginger, combine thoroughly. Add the soy sauce, Knorr, thyme and curry. Add the rice and stir to combine all ingredients. Check to see if some water is needed to cook the rice further. Cover and simmer until the rice is cooked. Add the prawns and stir for another minute for them to be heated.
